Easy Fuzzy Navel Ice Cream Pie

This easy fuzzy navel ice cream pie is light and summer-y, and best of all, quick to put together and totally no bake!

Is there anything that screams late summer louder than peaches and citrus and ICE CREAM?  I say no.

So, I have this fear that when I die I’ll leave behind a liquor cabinet packed with almost-full bottles of alcohol that no one really wants to drink.  And my grandchildren will feel a duty to hold on to those bottles.  They’ll pass them on to their children, who will pass them on to their children and so on. 

In 300 years those bottles of Gammel Dansk and buttered popcorn vodka will still be hanging around, collecting dust while my great-great-great grandchildren are flying their space cars around their neighborhood on Pluto. 

This might seem like an oddly random fear, but when my grandma died my parents ended up with half a dozen bottles of seriously old (like turn of the century) liqueurs, which they still have, and which no one ever touches.  My family is not good at throwing things away.

There is not a doubt in my mind that one day those bottles will be all mine.  So in an attempt to clear out some space before that day comes, I’m using up what I already have!  This is good news for all of us.

Because I happen to have a bottle of peach schnapps.

After these ice cream sandwiches turned into soup during my photo sesh, I’d promised myself I wouldn’t do another ice cream recipe this summer.  My plan was to come up with a bunch of recipes for next summer, then do all the photography in December.  

No amount of AC is enough to keep ice cream cool in August in Phoenix. 

But then the idea for fuzzy navel ice cream pie popped into my brain and I knew I couldn’t wait a full year to share it. 

The crust is a simple graham cracker crust.  Then you fill said crust with no churn ice cream that you flavor with orange zest and schnapps.  You top the whole thing with schnapps-infused whipped cream, freeze for a few hours and voilà!   Dessert is served.

So light, so refreshing, so sweet and delicious.  And I’m a few tablespoons closer to some empty space in my cabinet.  Win-win!

Easy, no-bake, and slightly boozy, this pie just screams summer!

Ingredients
Crust:
  • 7 tablespoons unsalted butter melted
  • 1 1/2 cups graham cracker crumbs from about 9 graham cracker sheets
  • 3 tablespoons granulated sugar
  • 1/8 teaspoon salt
Filling:
  • 14 ounces sweetened condensed milk
  • finely grated zest from 3 oranges
  • 2 tablespoons freshly squeezed orange juice
  • 3 tablespoons peach schnapps
  • orange food coloring optional
  • 2 cups heavy cream well chilled
Topping:
  • 3/4 cup heavy cream well chilled
  • 3 tablespoons powdered sugar
  • 1 tablespoon peach schnapps
Instructions
Crust:
  1. Lightly grease a 10-inch pie plate. Set aside.
  2. Combine all ingredients in a medium mixing bowl and stir until well combined. Press into an even layer in the bottom and part way up the sides of the prepared plate. Freeze for at least half an hour.
Filling:
  1. Combine the sweetened condensed milk, orange zest, and schnapps in a small mixing bowl and stir until combined. Add food coloring (if using) and mix well.
  2. Beat the heavy cream in the bowl of a stand mixer fitted with the whisk attachment (or in a large mixing bowl with an electric mixer) until the cream holds stiff peaks. Fold about a quarter cup of the heavy cream into the sweetened condensed milk mixture just to lighten, then gently fold in the remaining heavy cream until combined.
  3. Pour into the frozen pie crust and freeze for half an hour. (You’ll probably have a little filling left over. This is for you to snack on.)
Topping:
  1. Beat the heavy cream in a stand mixer fitted with the whisk attachment (or in a large mixing bowl with an electric mixer) until it thickens. Add the powdered sugar and beat until the cream holds stiff peaks. Beat in the schnapps just to combine. Spread the topping over the frozen pie. Freeze for at least 8 hours. Serve and enjoy.

    I think I have a vague (fuzzy) memory of drinking peach schnapps. Now that I’m old and boring and in my 30’s I’d much rather eat my schnapps in dessert form!! Especially if it’s in this delicious looking pie. OMG. It makes me think of fuzzy peaches!! Love this!!

    I’m glad you decided not to wait a whole year to post this pie, Kelsie! It looks creamy and dreamy!! I love the fuzzy navel twist and how you incorporated the orange zest. My husband and I don’t usually drink unless we are entertaining, but we must have this innate fear of being caught short on alcohol. Somehow we have amassed a decent collection of boozy goodness. I should follow your lead and use some up before they become inheritance! ?

    Haha! I can totally relate. Weird liqueurs bought for 2 tablespoons just don’t seem to ever seem to get used up…and they multiply up in that liquor cabinet! I bet I even have some peach schnapps. And this yummy pie is the perfect excuse to measure out a few tablespoonfuls 🙂

    I don’t get around to using the alcohol in my cabinet too quickly either! And the fuzzy navel is a blast from my past…I used to drink them oh so many years ago. lol . This pie looks so delicious and I love the flavors!

    Ha! An heirloom liquor cabinet that just moves from one generation to the next leaving each one to scratch their head and wonder why there was ever such a thing as buttered popcorn vodka. Though I’m sure with age the popcorn notes really pop and the butter undertones deepen to reveal the true essence. Let’s just make your whole liquor cabinet into pie and save ouselves the worry!

    Although oranges are associated with fall and winter, I love citrus ice cream. Besides, the combo of orange and peach flavors sound great to me! Also, this is an ice cream pie so how can I resist?:) Well done, Kelsie!

    Wait wait wait wait… buttered popcorn vodka???? Okay, I love buttered popcorn and I’m a big fan of vodka, but for some reason those three words together are freaking me out. I’d ask you if it’s good, but I’m willing to bet it’s unopened along with all your other bottles of goodies. 😉 Too bad we aren’t neighbors, I’d be more that happy to take your liquor off your hands! hahahaha!     I hear you Kelsie! The heat has been relentless, even in Colorado! Also, since there is schnapps in the ice cream (alcohol doesn’t freeze) the melting is accelerated. Sigh. I guess we just have to eat them slices faster:) Peaches and navels though – sounds perfect, why would you have waited until next summer? This pie is perfection.

    Great story about the liquor bottles. I use to love the fuzzy navel drinks, I haven’t had one in ages. I bet this fuzzy navel ice cream pie is a yummy as the drink. A nice and refreshing dessert for those hot summer days.

    Please me tell you don’t actually have a bottle of buttered popcorn vodka in your cabinet, Kelsie. Please. *shudder* But with that said, I highly support using up the liquor cabinet! That way, you can make space for more fun stuff…like more liquor that isn’t of the buttered popcorn variety. Hah! I’m loving the peach angle to this ice cream pie, and I’m thinking I could go for a slice of this one soon! (Although, I should admit that our temps here are in the low-mid 70’s today. Sure you don’t want to keep making your way north and easy? Hah!) Great combination of flavors! And great photos given the heat. Even though it’s almost always cool(ish) here, I still HATE taking photos of ice cream. Like I dread it. I break into a cold sweat just thinking about it. Anyhoo, happy Monday, my friend!
