Molten lava cake cookies are a simple fudge-filled cookie sure to make any chocolate lover happy!
The best kinds of friends are the kind who bake, don’t you think? Because sometimes they bake you cookies. (And cake and pie, but today let’s just focus on cookies.)
Well my friend Megan, the blogger behind the amazing Pip and Ebby, recently published her very first (of many, I hope) cookbook, Cookie Remix.
And she was kind enough to send me a copy. (I received the copy free of charge but was not otherwise compensated for this post. All opinions are my own.) And today I’m sharing one of the recipes from Cookie Remix with YOU!
Before I go any further, I need to let you know just how difficult it was to choose which recipe to make first.
Do I go with chocolate macchiato cookies or salted caramel apple pie cookies? Ummmm or cookie dough cheesecake cookies? (Those are happening tomorrow, you’d better believe it.)
But I started with the birthday cake cookies. SO GOOD! They’re packed with sprinkles and topped with frosting and more sprinkles and are so dang delicious. I was all set to post them but then I was craving chocolate and I decided to give these molten lava cake cookies a try.
And immediately I knew I had to post these instead. They’re freaking delicious and they’re FILLED WITH HOT FUDGE! And they’re so easy to make!
The cookie dough is just like any drop cookie you’ve ever made. After chilling the dough, you just shape it into balls, flatten those balls, add a little dollop of hot fudge in the middle, then fold the dough over the fudge and shape into a ball again. After they bake, you top them with even more chocolate for even more deliciousness.
Yes, what you see before you is a soft chocolate cookie stuffed with hot fudge sprinkled shaved chocolate.
Chocolate on chocolate on chocolate—just the thing to make any chocolate lover weep tears of joy. The cookie’s fudge-filled center is the stuff dreams are made of, I tell you! They’re sooooo not your ordinary cookie.
Actually, although all the recipes in the book are totally straightforward, none is an ordinary, everyday cookie. Each of the recipes, as the cover states, is inspired by sodas, candies, ice creams, donuts. . .you get the idea.
Every recipe also has a picture to accompany it so you’ll know exactly what the finished product will look like. (And so you’re even more tempted to bake each and every one.)
Make yourself a batch of molten lava cake cookies today, and then pick up Cookie Remix just as fast as you can! You won’t regret either one. (Unless of course you don’t like cookies. But obviously that’s not the case.)

- 3/4 cup salted butter at room temperature
- 1 cup light brown sugar
- 1 1/2 cups granulated sugar divided
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour plus more as needed
- 1/2 cup unsweetened cocoa powder
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1 teaspoon salt
- 1 12-ounce jar hot fudge ice cream topping*
- 2 1-ounce squares semisweet chocolate, shaved
- Place the butter, brown sugar, 1/2 cup of granulated sugar, eggs, and vanilla in the bowl of a stand mixer fitted with the paddle attachment (or in a large mixing bowl with a had mixer). Beat on medium speed until creamy.
- Combine the 2 cups of flour, cocoa powder, baking soda, baking power, and salt in a separate mixing bowl. Gradually mix this into the butter mixture and mix until just combined. If dough is too soft to handle, add more flour 2 tablespoons at a time to make it stiffer. (My dough needed 2 extra tablespoons.) Form the dough into a disk and wrap in plastic wrap; refrigerate for 2 hours.
- Preheat the oven to 350 degrees. Line 2 baking sheets with parchment paper and set aside.
- Remove dough from the fridge. Scoop out 2 tablespoons of dough and use your fingers to flatten into a 2 1/2-inch disk. Place 1/2 teaspoon of hot fudge into the center of the disk and wrap the dough tightly around it to form a ball. (See photos in post for a visual aide.) Smooth out the creases in the ball. Repeat with remaining dough and hot fudge. If the dough gets too soft while you’re working with it, pop it back in the fridge for a bit.
- Place the remaining cup of granulated sugar in a small bowl and roll the balls in the sugar to coat completely. Arrange 2 inches apart on the prepared baking sheets and bake 10 to 11 minutes. Remove from the oven and immediately sprinkle with the shaved chocolate. Serve and enjoy.
*You won't use the whole jar
